I LOVE TO EAT! but most of all I LOVE to cook!! I will be posting pictures and recipes of dishes I make. Some recipes are my own, others are not. I believe in eating healthy. My dishes are simple, affordable and healthy(well sometimes =) ) enjoy!

The most delicious chocolate pie in the whole world
You’ll need:
one 9inch pie crust, baked.
3 egg yolks, beaten
1 1/2 cups white sugar
4 tablespoons cornstarch
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
3 cups milk
1 tablespoon butter
1 1/2 teaspoon vanilla extract
1 cup cool whip, thawed.
In mixing bowl, cream together egg yolks and sugar. Mix in cornstarch,cocoa powder and salt. Then gently stir in milk.
Pour mixture in saucepan and cook over medium heat., stirring constantly, until it boils and starts to thicken. Remove from heat and stir in butter and vanilla.
Cool slightly and pour into pie crust. Chill for 2 hours and then top with cool whip. You can decorate with cocoa powder and chocolate curls here like I failed at. Man this pie is sooooo goood. It got demolished on thanksgiving =)  View Larger

Veggie chilli

One med. onion chopped
3 cloves garlic chopped
2 celery stalks chopped
1 bell pepper chopped
2 carrots peeled and chopped
4 zucchini cut into bite size pieces 
2 cups or one 16oz can of black beans and red kidney beans.
2 cans of diced tomato
1 can of crushed tomato
1/2 cup water or veggie broth
salt, pepper, a TON of chili powder, cumin, paprika, cayenne, hot sauce, cilantro, lime juice. 
Cook everything except the beans and tomatoes over med. heat until tender. Season with salt and pepper. Add the beans and tomatoes and water Season to taste.  bring to boil and reduce heat and simmer on low for about 10-20 minutes.  View Larger

Greek time! Falafel!!! Omg YUM!

STEP 1: Drain and rinse the garbanzo beans and add them to a food processor with the red onion, parsley, cilantro, salt, cayenne, garlic and cumin (all ingredients except baking powder and flour). Process the mixture until it forms a paste. Some chunks are okay and usually desirable. You may need to scrape down the sides of the bowl occasionally.

STEP 2: Place the mixture into a bowl and stir in the baking powder. Begin adding flour, 2 Tbsp at a time) until the paste becomes dry enough to form into patties without sticking to your hands. Chick pea or garbanzo bean flour gives the best texture but all-purpose can be used in it’s place. Refrigerate the mixture for at least 4 hours to allow the flavors to blend.

STEP 3: Using a small measure (about 1/8th cup or 2 Tbsp), form the falafel dough into small patties. If freezing the patties, place them on a parchment lined baking sheet so they can freeze without sticking together. The patties can be transferred to an air-tight container once they have frozen through.

STEP 4: To cook the fresh or frozen patties, heat oil in a skillet (or pot if deep frying) until very hot but not smoking. Cook the patties on each side until deep golden brown and crispy. Serve with tzatzikitahinihummus or stuffed into a pita.

Spinach cheese enchiladas 
you’ll need:
One ten count pack corn tortillas 
one box frozen spinach thawed and drained ( to drain place in kitchen towel and wring out)
2 cloves garlic minced
1/4 onion minced
one 8oz pack shredded Monteray jack cheese 
about 2 cups of your favorite Verde salsa 
vegetable oil
cumin, salt and pepper 
Cook onions and garlic for about 3-5 minutes then add spinach. season to taste. On low heat, add about 1/4 cup veggie oil to small pan. Once hot dip the tortillas and place on a plate lined with paper towels. Place about a tablespoon full of spinach mixture in tortilla and add about a hand full of cheese and roll up. Add to baking pan and cover with the salsa. You can add more cheese if you want. Cook for about 5 minutes on 350 or until cheese is melted. Super yum yum View Larger

Havent posted in awhile! =( I had my wisdom teeth taken out so all I could eat was soup for a hot minute. But I have been cooking a ton in bulk. On Saturdays I will make about a weeks worth of food. I buy my beans in bulk and cook them and make bean burgers, salads, soups and other stuff and freeze them. I’ve noticed it is kind of hard being a vegetarian and wanting a quick healthy meal that doesnt cost an arm and a leg. So I have been making my own!
